Mom's Curry

Saute in butter:
1 green bell pepper, chopped
3/4 cup red bell pepper, chopped
1/2 cup orange bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced

Add:
1 Tbsp minced fresh ginger
1 Tbsp red curry powder (medium hot)
3/4 Tbsp salt
black pepper to taste

Add and bring to a boil until thickened:
1 cup chicken broth
1 can coconut milk
4 Tbsp cornstarch
2-3 cups of cooked grilled chicken, chopped

Optional additions: -Broccoli
                                -Water Chestnuts
