Liz's Turkey Curry

Saute
2-3 tsp olive oil 1 onion finely chopped 2 cloves garlic crushed (or 2 tsp minced garlic) 1 lb ground turkey or 1 lb chicken- cooked and shredded
Add
1 cup diced carrots 1 can diced potatoes or 4 small red potatoes cooked and diced. 1 1/2 TBLS Curry powder 1 tsp garam masala 1/2 tsp cumin 1/8 tsp turmeric 1/2-1 tsp Coriander 1 can coconut milk Small dash of ground red pepper Salt and pepper to taste Cook until all veggies are tender. Serve over rice.

Optional additions- bell pepper sliced. - pineapple chunks - green beans - cilantro
