Crispy Coconut Chicken Fingers

Recipe by Our Best Bites 12 chicken tenders (ya know, more or less...) 1-2 eggs (start with one and crack another if it runs out) 1/2 C flour 1 C sweetened coconut flakes 1 C panko bread crumbs 1 1/2 tsp garlic powder 3/4 tsp table salt 3/4 tsp curry powder 1/4 tsp onion powder 1/8 tsp cayenne pepper (you can leave this out if you want to skip the spice for the kiddos) preheat oven to 450 degrees. Give coconut a rough chop so it's about the same size as the panko pieces. Combine it with Panko and spices in a shallow dish. Mix well to distribute all of the spices. Place the flour in another shallow dish, and the egg in another. Give the egg a quick beating. Working with one chicken tender at a time, dredge in flour... then dip in egg... And then finally coat in the coconut Panko mixture. Press in with your fingers to make sure the entire thing is well coated. Chicken and Rice

Otherwise known around here as rice and sauce with the yummy chicken. This is a very simple and quick meal. I cream together- 2 cans of cream of chicken soup (I use the 98% fat free ones) 8 oz. of cream cheese Then I cook chicken tenders in olive oil and seasoned with Simply Organic Grilling Seasons Steak Seasoning. We serve this over rice. Super easy and so yummy!

Dinner Rolls

This recipe also makes the BEST cinnamon rolls! If you're like me and have had bad luck making yeast breads... this is the recipe for you ! My breads have tasted good in the past, they just weren't fluffy and soft! I am going to write this recipe as if you are like me...clueless when it comes to baking breads! First thing you  need is a mixer and a dough attachment. (If you have a Kitchen Aide...it's the one that looks like a hook!) Ingredients: 2 TBS yeast (or 2 of the 1/4 oz. packages) 1/3 cup sugar 1/3 cup warm water ( from the tap is fine...turn on the water and hold your finger under it. When it turns hot, that's the water you want to use!) 1/2 cup butter 2 cups milk 2 eggs 6-7 cups of flour. In your mixing bowl (the one attached to your mixer) add yeast, sugar and warm water. Cheesy Broccoli, Chicken and Rice

From www.kraftfoods.com lb. boneless skinless chicken breasts, cut into bite-size pieces 1 can (14-1/2 oz.) chicken broth 2 cups instant white rice, uncooked 1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes 1 pkg. (10 oz.) frozen chopped broccoli, thawed COOK chicken in large nonstick skillet on medium-high heat 5 min. or until chicken is done. STIR in broth. Bring to boil. ADD rice, VELVEETA and broccoli; cover. Remove from heat. Let stand 10 min. Stir until VELVEETA is completely melted and mixture is well blended. sHORTCUT To quick-thaw frozen broccoli, microwave for about half the cooking time specified on the package. SUBSTITUTE Substitute 1 pkg. (16 oz.) frozen vegetable blend, thawed, for the broccoli.

Chocolate Coconut Milk Ice Cream

By The Nourishing Gourmet Tried out by Brooke who says it is so good! 3 cups of unsweetened coconut milk (about two cans) 2/3 cup of cocoa powder 6 tablespoons agave syrup 1 teaspoon vanilla extract Whisk cocoa powder in a small amount of coconut milk (they use Thai’s organic coconut milk, do not use lite), until smooth. Then add the rest of the ingredients (you can use whatever sweetener you like), (If you can have dairy, coconut milk and cream together make a wonderful ice cream) and whisk until well combined. Or dump all ingredients together and blend with a stick blender. Make according to your machines instructions. If you do not have an icecream maker, you can also make it in a bag- 1/2 cup salt (The bigger the granules, the better. Kosher or rock salt works best, but table salt is fine.) Mom's Banana Nut Bread

Mom's Banana Nut Bread Cream together: 1/2 cup butter 1 cup sugar Add: 2 eggs and beat Add: 1 cup mashed bananas 1/4 cup milk 1 tsp. vanilla Sift dry ingedients(I don't usually remember to do this and it still turns out great!): 2 cups flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt Add: 1/2 cup chopped nuts Bake in well greased loaf pan at 350 for 1 hour our until knife comes out clean! *Makes one loaf
